This was the only dish that my Korean comrades fed me that made me sick! They told me that their grandparents and parents actually scavenged the ingredients from the trash outside of United Nations and U.S. Army bases following the Korean War and through the dictatorship period of modern Korea. They also showed me a restaurant that could provide ingredients from the same source upon special, discrete request. I passed!

Soooo, Herself and I were going to only pick up some ballast for the DÜRR (the Arid) and celebrate getting to that milestone with some Modern American BBQ smoked brisket.

But after working on the railway all the live long day then later that afternoon, transporting & shovelling 200kg of 5-7mm rock, I didn’t have the energy to get the smoker ready. So the 18 hour brisket spent another 24 hours sitting in the water bath at exactly 67.5 degrees C.

But today at 2:30 shoved it in the smoker and pulled it out at 5:30.

  • It could be cut with a regular knife
  • it had a nice hard bark
  • and a “burnt end”
  • EDIT: even got a bit of smoke ring, (which shouldn’t happen)

Oh, and for the New Yorkers, in photo #2That’s a Knife!

And a Fosters ?just one cuz they are like 1/2 gallon each!

You made me laugh Pete, when you reminded me of those large tinnies of Fosters. I haven’t seen Fosters here for decades.

It is still King of the export market for all Aussie beers. As our beer market shifted to craft beers, Fosters share plummeted and it now reportedly holds less than 1% (0.2%) of the market here.

I had a look to see what I might recommend , and our locally brewed in barrel Coopers Pale Ale, is the second largest imported Aussie beer to the USA. If you can find it in the bottle, gently swirl the bottle as it is drunk cold and cloudy.

You may have to have two, to come close to Fosters.

PS: If you need an excuse to try it; Coopers beer yeast contains B vitamins, such as B1, B2, B3, B6, and folate, which are retained in the bottle-conditioned beer.

Just found some new cooking styles just in time for the Holidays…

My Mother once received a gag turkey recipe from a friend. It was for boneless turkey with popcorn dressing. The cook was supposed to stuff the turkey with un-popped popcorn, then put it into the oven to roast. When the popcorn popped, it would supposedly blow the meat off the bones of the turkey (BUT it could also blow the door off the oven!!).

Dave, you remind me of this wonderful product.

So today is my wife’s birthday. So I spent the day cooking. Baked lobster, steamed king crab, coconut shrimp shrimp stuffed portobello mushroom, stuffed zucchini boats, roasted elephant garlic, bread with avocado basil pesto spread, spicy salmon roll x wine and her favorite cake .

Sorry. But not really. I love two things more than anything else. My wife and cooking. When the two collide it’s honestly a selfish pleasure. She just benefits from my two loves colliding. I’d lie and say it’s all for her but honestly I get selfish pleasure from it
