It's that time of the year

Today was my WAH day so I fired up the old up-cycled file cabinet evaporator and started on the sap. We’ve got about 20 gallons so far so that means about 2 Quarts of syrup! It’s gonna be a long night.

That looks sweet, Dan. 10 gallons per quart … WOW. sounds like a lot of work but I’m sure it makes it taste all the more better. Thanks for sharing.

Have a friend in Mass. that used to make his own Maple Syrup ever year. He started sending me a quart as a gift each year, man was that stuff good.

We were talking in person one time and I thanked him for the syrup and commented on how well it went on pancakes. Jeezzzz you’d thunk I had insulted him.

He said " You don’t use home made Maple Syrup on pancakes you use it as an ice cream topping". Milk and eggs we give away for free but our maple syrup is the ONLY thing we keep for ourselves. Well, our honey is pretty sacred too. We use both on pancakes, French toast, ice cream even turkey sandwiches, just not for cooking. That’s funny though. Thanks for sharing.

Exactly. The ratio is about 40:1 depending on how you like it. Takes roughly 12 hours for my evaporator to boil down 10 gallons. Cost is nearly nothing using wood. All labor. I just shut her down for tonight as we are about to get hit with a storm. 1-3 inches per hour will undo the days work!

Last few years we get around 40:1. These are red (swamp) maple. I finish off on the range. Wood does give better flavor. In fact, I was drinking Headway IPA all afternoon and the wood smoke in my nose enhanced an already excellent beer!

How much sap can you get from each tree, per day?

I just read somewhere that they make syrup from birch sap too, but it takes a minimum of 100 gallons to produce one gallon of syrup.

It varies greatly Ray. Size of the trees and the weather being the greatest factor. I can tell you I’ve gathered about 23 Gallons in 23 days from 8 trees so avg 16oz per tree per day. I tried Birch years ago, Reduced to about 50% then gave up and brewed a beer with it. Made an OK English ale.

But now a days around here they use tubing to each tree and then hooked to a vacuum pump to suck it out of the trees it has to be boiled rather soon or it goes bad. A lot of old farms use there refrigerator room to keep it cold.

What the??? I’ve never heard of this sap sucking thing but I prefer natural methods. Heck, I milk the goats by hand. I keep the sap in carboys in the garage fridge until boiling time.

I’m wondering, how far into the tree do you tap it? Also, is there any risk of damaging the tree if you pump out too much sap?

I use treesaver taps and drill 5/16" hole about 1-1/2" deep. I don’t pump - just let gravity do the work. Stuff I’ve read online today says no harm but I’m not sure https://northernwoodlands.org/outside_story/article/how-much-sap
