* 1½ cups crushed saltines
* 1 cup melted butter
* 2½ cups sliced onions
* 2 tablespoons butter
* 1½ cups scalded milk
* 3 beaten eggs
* 2 cups shredded Cheddar cheese
* salt
* pepper
* 3 ounces of bacon bits
Combine crackers and melted butter to make a pie crust
Cook onions with 2 tablespoons butter until brown
Spread onions evenly into crust
Add scalded milk to the eggs and cheese, stirring until melted
Mix in the bacon bits with salt and pepper
Pour mixture over onions
Bake 350° F for 45 minutes.
I like to flavor with Louisiana Hot Sauce when serving.
For a healthy cholesterol free version just eliminate the butter, milk, eggs, cheese and bacon.
