      Current projects

      Prime rib. Half is being smoked on Friday, the other half on Sunday.

      Nothing like smoked bird.... One year I smoked, fried and baked a turkey on Thanksgiving. That was the first time I smoked a bird, it was GREAT! It was also enlightening to sample the turkey iterations mono-mono. All were great, each with their own specific and dynamic flavor. Your project is calling me....

      Pulled the chickens after about 4 hours when the internal temp reached 168 degrees.

      Doesn't look like the chickens rendered much juice.  But they sure look good!

      I use a propane Masterbuilt with a side burner ducted in for more smoke.

      What am I missing, your papers comment went right over my head? That said I grew up in Saugus, CA and I remember that album with the giant Bambu paper, Cheech and Chong was a favorite of my friends and I.
